
Smoky, sweet, savory, and just a little spicy, these Cocoa Maple Chipotle Chicken Thighs combine the deep flavor of cocoa-infused pure maple syrup with chipotle peppers, fresh lime, garlic, and warm spices. The maple syrup caramelizes beautifully as the chicken cooks, while the cocoa complements the smoky chile flavor and adds richness without making the dish taste overly sweet.

Ingredients
For the Chicken
- 2½–3 lbs bone-in, skin-on chicken thighs, about 6–8 thighs
- ½ cup Northern Reach Maple Cocoa Infused Maple Syrup
- 2 chipotle peppers in adobo sauce, finely minced
- 1 tablespoon adobo sauce from the can
- 2 tablespoons fresh lime juice
- 1 tablespoon apple cider vinegar
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- 1 teaspoon kosher salt
- ½ teaspoon freshly ground black pepper
For Finishing
- 2 tablespoons Northern Reach Maple Cocoa Infused Maple Syrup
- 1 tablespoon fresh lime juice
- Chopped fresh cilantro, optional
- Lime wedges, for serving
Instructions
1. Make the Cocoa Maple Chipotle Marinade
In a medium bowl, whisk together the Cocoa Infused Maple Syrup, minced chipotle peppers, adobo sauce, lime juice, apple cider vinegar, olive oil, garlic, smoked paprika, cumin, salt, and black pepper.
The marinade should be sweet and smoky with noticeable chile heat and a subtle roasted cocoa character.
2. Marinate the Chicken
Pat the chicken thighs dry with paper towels and place them in a large resealable bag or nonreactive container.
Pour the marinade over the chicken and turn the thighs until thoroughly coated. Refrigerate for at least 1 hour or up to 4 hours.
Remove the chicken from the refrigerator about 20–30 minutes before cooking.
3. Make the Finishing Glaze
Combine 2 tablespoons of Cocoa Infused Maple Syrup with 1 tablespoon of fresh lime juice. Set aside.
This fresh glaze is added near the end of cooking so the finished chicken retains a pronounced cocoa-maple flavor.
Grilling Method
Preheat the grill for two-zone cooking, with one side at approximately 375–400°F.
Remove the chicken from the marinade and allow the excess to drip off. Discard the used marinade.
Place the thighs skin-side up over indirect heat. Close the grill and cook for approximately 20 minutes.
Turn the thighs skin-side down and continue cooking until the skin begins to crisp and the internal temperature approaches 165°F.
Move the chicken over direct heat for the final few minutes, watching it carefully. Because maple syrup contains natural sugars, the glaze can caramelize and burn quickly over direct flame.
Brush the chicken lightly with the Cocoa Maple finishing glaze during the final 2–3 minutes of cooking.
Cook until the thickest part of each thigh reaches at least 165°F. For particularly tender chicken thighs, an internal temperature around 175–185°F works very well.
Oven Method
Preheat the oven to 400°F.
Arrange the marinated chicken thighs skin-side up on a foil-lined rimmed baking sheet or in a roasting pan.
Roast for approximately 30–35 minutes, or until the chicken reaches at least 165°F internally.
During the final 5 minutes, brush the thighs with the Cocoa Maple finishing glaze. For additional caramelization, switch the oven to broil for approximately 1–2 minutes, watching the chicken closely to prevent the maple glaze from burning.
To Serve
Allow the chicken to rest for 5 minutes before serving.
Finish with chopped cilantro, if desired, and serve with fresh lime wedges. For a stronger maple presence, drizzle a very small amount of Cocoa Infused Maple Syrup over the chicken immediately before serving.
